Rajasthan- A culinary delight!

India is a land of colour, culture and cuisines. Every community, region and religion has its own delicacies and specialties. Rajasthan tops the charts when it comes to food. Infact the best way to experience this vibrant and colour state is through its finger licking, traditional food.

Rajasthan is a dry and arid region with major influence from the nomadic and war like way of life so the food habits and delicacies have also been customised to these conditions. From the royal food cooked in the traditional kitchens of the Rajput kings to the humble homes of farmers and shepherds, Rajasthani food has a unique touch.

Non vegetarian delicacies– As per the dictacts of religion, most families were vegetarians but the ruling clan of Rajputs was renowned for hunting and came back with the kill that was later made into delicious meats. Since then non vegetarian food has gained prominence in the state. Some of the lip smacking delicacies that you can devour on include; Laal Maas (mutton), safed Maas (chicken), Khad khargosh (wild hare cooked and roasted underground), Saanth ro achaar (pickled wild boar meat).

Vegetarian munchies– The dishes cooked in vegetarian gravies are cooked in a lot of ghee. They are made with a lot of Indian masalas. Some of the popular ones are Ker Sangri, which is a special bean found in the region. Another popular dish is potatoes served with dumplings made of pulses and is roasted slowly and softened in yummy gravy called Mangodi Aluk iShak. Besan or the Gram Flour is used a lot in different combinations here with yoghurt that makes for delicious Rajasthani vegetarian gravies.

Sweet lovers paradise– Those of you with a sweet tooth will love the flavours and fragrances of desserts found in Rajasthan. Here, a lot of pulses, lentils and Ghee is used to make sweets. During festivals chakas and halwas are made like Moong Dal ka Halwa, Chane Ka Halwa and Sooji Ka Halwa. Sohan Halwa is also a unique dish of Rajasthan. Gaund ka ladoo is another popular sweet consumed during winters in Rajasthan. Kheers of different kinds are also quite popular here and so is Ghevar, one of the tastiest desserts served in Rajasthan.
